Give the gift of experience. One of the most wonderful gifts you can give is an event or a weekend away that encourages the happy couple to get away and focus on each other.
Planning a wedding *should* be something that brings a couple closer together, but the stress and angst often created by planning the party of your lifetime can really put a damper on the romance.
Give them a night away from it all to a romantic location - perhaps somewhere they have never, or would never go otherwise. Try to surprise them with a gift certificate for dinner when they arrive. This isn't a gift that can cook a meal, but it is definitely a unique wedding gift that the receiving couple will never forget.
